Capsicum & Carrot curry/poriyal with Chapathi

Capsicum&Carrot curry/poriyal This recipe goes well with roti, chapathis, rice. Ingredients: Carrot -1 capsicum -1{Medium Size} Onion -1{Medium Size} Tomato -1 oil to fry -2 tbsp water - 1 & 1/2 cup Salt -to taste Red chilly  Powder - 2 tbsp Parsley    Powder -1  tbsp (optional) Coriander leaves  Preparation: Chop the onion,(after washing)tomato,capsicum,carrot finely and keep it aside. Method: Heat Oil in pan .Then add onion and saute it until it turns golden brown color. Now add tomatoes and saute it until it becomes smooth. If parsley powder  available ,add it and stir well. Add chilly powder and then veggies stir for  few seconds. Add water and close and leave it until the veggies are cooked well. When the veggies get softer and water get dried and get thick like gravy  add coriander leaves. Serve with  roti /chapathis /rice. For more recipes , visit  http://muslimahhalalkitchen.blogspot.com
