Capsicum & Carrot curry/poriyal with Chapathi





Capsicum&Carrot curry/poriyal


This recipe goes well with roti, chapathis, rice.

Ingredients:
  • Carrot -1
  • capsicum -1{Medium Size}
  • Onion -1{Medium Size}
  • Tomato -1
  • oil to fry -2 tbsp
  • water - 1 & 1/2 cup
  • Salt -to taste
  • Red chilly Powder -2 tbsp
  • Parsley  Powder -1 tbsp (optional)
  • Coriander leaves 


Preparation:


  • Chop the onion,(after washing)tomato,capsicum,carrot finely and keep it aside.

Method:

  • Heat Oil in pan .Then add onion and saute it until it turns golden brown color.
  • Now add tomatoes and saute it until it becomes smooth.
  • If parsley powder  available ,add it and stir well.
  • Add chilly powder and then veggies stir for  few seconds.
  • Add water and close and leave it until the veggies are cooked well.
  • When the veggies get softer and water get dried and get thick like gravy  add coriander leaves.
  • Serve with roti /chapathis /rice.
